Beer & Potato Soup
Ingredients
- 5 Idaho potatoes (washed, skin left on)
- ½ C chopped onion (roughly chopped)
- 2 Tsp. granulated garlic
- 4 Qts. Chicken stock
- 1 ½ C Mash House Natural Blonde Beer
- ½ c. Mash House India Pale Ale Beer
- 1 Qt. heavy cream
- ½ lb. Shredded white cheddar
Preparation
- Roughly chop the potatoes into large pieces.
- In a pot, boil potatoes, onions, garlic, chicken stock, and beer until the liquid is reduced to about ¼ of its original amount.
- Stir in heavy cream and cheddar until the mixture is incorporated.
Using a hand blender or food processor, grind soup until it is smooth and evenly incorporated. - Salt and pepper to taste
- If you like, you can garnish this dish with a variety of things. We suggest chives.
