Beer & Potato Soup

Ingredients
  • 5 Idaho potatoes (washed, skin left on)
  • ½ C chopped onion (roughly chopped)
  • 2 Tsp. granulated garlic
  • 4 Qts. Chicken stock
  • 1 ½ C Mash House Natural Blonde Beer
  • ½ c. Mash House India Pale Ale Beer
  • 1 Qt. heavy cream
  • ½ lb. Shredded white cheddar
Preparation
  • Roughly chop the potatoes into large pieces.
  • In a pot, boil potatoes, onions, garlic, chicken stock, and beer until the liquid is reduced to about ¼ of its original amount.
  • Stir in heavy cream and cheddar until the mixture is incorporated.
    Using a hand blender or food processor, grind soup until it is smooth and evenly incorporated.
  • Salt and pepper to taste
  • If you like, you can garnish this dish with a variety of things. We suggest chives.
